East Cape Smokehouse

Opened in 1996, Baja Papa’s East Cape Smokehouse offers custom smoking, packaging, and freezing services to the serious East Cape angler. We combine our hands-on, homestyle preparation with the most modern smoking and packaging equipment to ensure consistency and quality. Daily pickup service is available at your favorite East Cape resort. Our process using natural smoke from imported sugar maple and hickory woods, local fresh fish, sea salt, brown sugar, and organic honey . . . that’s it! It’s all natural with no added preservatives or chemicals.

First and foremost, our claim to fame is the smoking service. We start by taking your catch and filleting it down to pure edible fillet in a clean and sanitary environment. We then brine the fillet in our secret mixture of sea salt, brown sugar, and organic honey. The fillet is then placed on our oven racks and rolled into our walk-in where it sits overnight. The next morning, the rack is placed in one of our two commercial smokers where it is smoked using a special blend of imported sugar maple and hickory. Each batch is smoked by carefully following our exact specifications and procedures. After the cooking cycle finishes, the oven rack is placed back in the walk-in where the fish cools. Finally, the fish is professionally vacuum-sealed, labeled, and placed back in the walk-in where it stays until pickup. For the smoking service, we currently charge *$4.25 per pound based upon the cleaned fillet weight of the fish.

We also offer the flash freezing service. After your catch is filleted in a clean and sanitary environment, it is rinsed in a salt-ice brine and drained. It is then professionally vacuum-sealed and placed in one of our two bionic commercial freezers at minus 10 degrees, where it sits until pickup. For the freezing service, we currently charge *$2.00 per pound based upon the cleaned fillet weight of the fish.

REMEMBER . . . Absolutely, positively no one else in Baja will handle and package your fresh fish as carefully as BAJA PAPA’S EAST CAPE SMOKE HOUSE. Don’t allow your fish be handled in an unsanitary manner to save a few bucks, let us take care of it and, whichever service you choose, you’ll be sure to enjoy a quality product for months to come.

*Current prices are $4.25 per pound to smoke and $2.00 per pound to flash freeze if you are a Los Cabos customer.
